Luxe For Less Christmas
This year Woolworths challenged me to create a luxe Christmas lunch that offered great value. I personally feel duty bound to consume less this festive season, assist where I can and eat (and gift) fresh as much as possible. So, I was both creatively and emotionally ready for this challenge. It ticked all those boxes.
So… here is how you can have a luxe Christmas Day for under $100.

PJ’S SOURDOUGH STUFFING.
INGREDIENTS
Loaf Woolworths Sourdough Bread (stale)
250gm currants
150 gm butter (melted)
1 punnet Woolworths fresh sage (chopped)
1 punnet Woolworths fresh thyme (chopped)
250gms Woolworths Silvered Almonds
1 cup chicken stock
Salt and Pepper to taste
METHOD.
Blitz bread in a food processor until a medium crumb is formed and place in mixing bowl. Combine currants, cranberries, seasoning, fresh herbs, nuts with the bread in a large mixing bowl.
Melt the butter and use a wooden spoon to softly fold through the mix. Transfer to an oven safe tray and pour stock over the top. Cover with foil and bake on 160 for half an hour. Remove foil and bake until golden brown.
